Charleston 13 Bean Soup
This is one of our company’s original recipes that has been used for over 30 years with our 13 Bean Souper Soup mix.
- 24 oz Charleston’s Own® 13 Bean Soup Beans
- Ham Bone with meat attached
- 2 Large onions, chopped
- 2 cans Tomatoes
- 2 Bay Leaf
- 2 Tsp Chili Powder (optional)
- Juice, from 1 lemon
- Salt to taste
- Black Pepper to taste
- Hot Sauce to taste
Wash and sort beans thoroughly. Soak beans overnight in 3 qt water and 4 TSP salt. Drain beans the next morning.
In a large pot, combine drained soaked beans, 4 qt water, ham bone, onion, tomatoes, chili powder and bay leaf. Cover and bring to boil. Reduce heat and simmer 2 ½-3 hours until beans are soft. Remove bay leaf and Ham bone and strip meat. Cut meat into bit size pieces and return meat to pot. Discard bone and bay leaf. Add lemon juice and return to simmer for 10 min. Salt, pepper and hot sauce to taste. Ladle into warmed bowls and serve for a hearty Lowcountry meal. *To use the 12 oz package of Charleston's Own 13 Bean Soup, reduce the other ingredients by half.
