Carolina Hush Puppies
Hush Puppies are typically served with seafood in the Lowcountry and Coastal Carolinas. It is sometimes offered as a substitute for bread. The key to good hush puppies is stone ground cornmeal and hot oil.
Carolina Hush Puppies
1 ½ Cups Cornmeal, yellow
½ Cup Flour, all purpose
1 Teaspoon Baking Powder
½ Teaspoon Baking Soda
1 Teaspoon Salt
1 Egg, beaten
1 Onion, small, minced fine
1 Cup Buttermilk
½ Jalapeno, seeded and minced fine
Oil for frying (vegetable or peanut)
Combine ingredients in a bowl and mix into a batter. In a sauce pan, heat oil until hot. Drop batter into hot oil by the spoonful and cook until slightly golden brown. Remove from oil and drain on paper towels. Serve hot with whipped butter or whipped honey butter.
*Note: Do not make above recipe with self-rising cornmeal. The jalapeno can be omitted for those that do not wish it
